Spinach Tomato Avocado Salad with Vidalia Onions

A light and flavorful mix of fresh summer veggies and creamy avocado, this spinach salad is as delicious as it is simple! Mix one up for your next summer cookout or potluck, or make one yourself for a healthy meal. Recipe and video by Food Network Chopped champion, Chef Shannen Tune.

 

Ingredients
  • 1 medium Vidalia onion, chopped
  • 1 bag of baby spinach
  • fresh parsley, chopped
  • 1 fresh avocado, diced
  • grape tomatoes, halved
  • croutons
  • poppyseed dressing
  • salt, to taste
  • black pepper, to taste
Instructions
  1. Empty baby spinach into a large mixing or serving bowl.
  2. Add tomato, avocado, parsley, croutons, and onions to the mixing bowl.
  3. Pour in desired amount of dressing and toss evenly.
  4. Season with salt and pepper, and toss again.
  5. Serve and top with more chopped parsley, if desired.
