Pickled Vegetables with Vidalia Onions

Pickled vegetables are an easy, delicious appetizer! Very little prep time required to turn these mixed vegetables into a sweet, tangy treat. Add them to our sweet onion charcuterie board for an appetizer sure to impress any guest.

  • 1½ cups of broccoli florets
  • 1½ cups of cauliflower florets
  • 2 large Vidalia onions, sliced
  • 1 cup of yellow squash, sliced
  • ¾ cup of carrots, sliced
  • 2 cup of water, boiling
  • 1 cup of sugar
  • ½ cup of cider vinegar
  • 2 tsp of celery seed
  • 1 (14 oz) can of artichoke hearts, drained & quartered
  1. Combine broccoli, cauliflower, onions, squash and carrots in a large glass bowl and set aside.
  2. Combine water, sugar and vinegar, stirring to dissolve sugar.
  3. Pour hot mixture over vegetables.
  4. Cover and refrigerate for several hours before serving.
