Spicy Strawberry Onion Cream Cheese Dip

Ingredients
  • 1 cup Florida strawberries, chopped
  • ¾ cup sweet onion, diced - approx ½ of a large sweet onion
  • ⅓ cup brown sugar
  • ⅓ cup orange juice
  • 1 jalapeno pepper, chopped (leave seeds in for extra heat, remove seeds for milder)
  • Juice of ½ lemon
  • ⅛ tsp cinnamon
  • 1 (8 oz) package cream cheese, softened - use low fat or ⅓ less fat for a lighter dip
  • crackers, for serving


Instructions
  1. In a small saucepan, combine strawberries, onions, brown sugar, orange juice, jalapeno, lemon juice and cinnamon.
  2. Bring to a boil.
  3. Reduce heat and simmer for about 10 minutes, or until thickened.
  4. Cool completely.
  5. In a medium bowl, beat the cream cheese with an electric mixer until light and fluffy.
  6. Stir in strawberry onion mixture.
  7. Refrigerate until ready to serve.
  8. Serve with pretzels or crackers of your choice. 

Note: Have extra cream cheese available just in case you would like to thicken it up more. If you don't let the orange juice mixture thicken enough and cool completely, it will make your dip thinner. If this happens, just add more cream cheese to thicken.
