Simple Homemade Pico de Gallo with Vidalia Onions

  • 1 lb tomatoes (approx. 4 medium tomatoes), diced
  • 1/2 medium Vidalia onion, (approx. 1 cup), diced
  • 1 jalapeno pepper, diced (remove seeds for less heat)
  • 1/2 cup cilantro, chopped
  • Juice from 1 lime
  • Salt and pepper to taste
  1. Add all ingredients to a medium-sized bowl. Stir well.
  2. Enjoy immediately or cover and refrigerate overnight.
  3. Serve with your favorite chips and fresh veggies for dipping.

Also delicious on tacos, burgers, and grilled chicken!
