Sheet Pan Shrimp and Sweet Onion Fajitas

These shrimp fajitas make for a quick 30 minute weeknight dinner with little cleanup. Shrimp, bell peppers and sweet onions come together on one sheet pan for incredible flavor. Top with your favorite toppings like lettuce, tomatoes, salsa, and guacamole! Recipe and photography courtesy of Healthy Family Project.

Ingredients
  • 1 lb peeled, deveined shrimp
  • 2 rainbow bell peppers, sliced
  • 1 large sweet onion, sliced
  • 1 Tbsp olive oil
  • 2 Tbsp low-sodium taco seasoning
  • 1 lime, juiced
  • ¼ cup chopped cilantro
  • 8 small flour tortillas, warmed (substitute corn tortillas if preferred/for gluten free)
Instructions
  1. Preheat oven to 425°F (220°C).
  2. Toss shrimp, peppers, onions, olive oil, taco seasoning and lime juice in large bowl until well-seasoned. Spread single layer on baking sheet and bake 15 to 20 minutes, or until shrimp is cooked and veggies are tender.
  3. Remove from oven and garnish with cilantro.
  4. Serve in tortillas with your favorite toppings.
