Mediterranean Salad with Vidalia Onions

This easy salad is full of fresh veggies including tomatoes, Vidalia onions, and cucumbers. It is the perfect side dish for your next barbecue or cookout and sure to impress any guest.

  • 1 medium Vidalia onion, sliced
  • 3 cups cherry tomatoes, halved
  • 3 large cucumbers, coarsely chopped
  • 1½ cups mozzarella (bocconcini balls)
  • 1 cup roasted garlic cloves, coarsely chopped
  • 1 cup Kalamata olives
  • 2 Tbsp parsley
  • 2 Tbsp oregano
  • 1 tsp onion powder
  • olive oil
  • balsamic glaze
  1. In a large salad bowl, toss together all ingredients to combine.
  2. Serve immediately or chill in refrigerator until serving.
