Grilled Vidalia® Onion and Peach Salad

A wonderfully Georgia-themed salad created by Executive Chef and TV Personality Jon Ashton.

Ingredients
  • 1 RealSweet® Vidalia® onion, sliced into 1/2-inch rings
  • 1 pkg. (6 oz.) Fresh Express® Baby spinach
  • 1 peach, sliced in half
  • ¼ c. goat cheese, crumbled
  • Marie's® Blue Cheese dressing, as desired
Instructions
  1. Brush sliced onions with olive oil and season with salt and pepper.
  2. Grill onion slices and peach over medium-high heat until tender, about 4 minutes per side.
  3. Thinly slice peaches. Toss together baby spinach, peaches and onions. Top with goat cheese and drizzle with salad dressing.
