Grilled Vidalia Onion and Peach Salad

A wonderfully Georgia-themed salad created by Executive Chef and TV Personality Jon Ashton. Vidalia onions, fresh peaches, and goat cheese go together to make a deliciously sweet and creamy salad perfect for any occasion!

  • 1 Vidalia onion, sliced into ½-inch rings
  • 1 (6 oz) package of Fresh Express® Baby spinach
  • 1 peach, sliced in half
  • ¼ cup goat cheese, crumbled
  • Marie's® Blue Cheese dressing or our Vidalia Onion Salad Dressing, as desired
  1. Brush sliced onions with olive oil and season with salt and pepper.
  2. Grill onion slices and peach over medium-high heat until tender, about 4 minutes per side.
  3. Thinly slice peaches. Toss together baby spinach, peaches and onions. Top with goat cheese and drizzle with salad dressing.
