Citrus Salad with Vidalia Onion Dressing
This amazing salad highlights some of the freshest items of the fall and winter months - citrus and sweet onions. It is a healthy, colorful, and delicious recipe to enjoy for either lunch or dinner that brightens up the day. Plus, the Vidalia onion dressing is a perfect complement to this colorful and fresh salad!
Ingredients
- 1 lb spring mix salad blend
- 5 to 6 clementines, peeled and separated
- ½ RealSweet® Vidalia®, sliced
Dressing:
- ½ RealSweet Vidalia onion
- ¼ cup vegetable oil
- 1 Tbsp orange juice
- 1 Tbsp rice wine vinegar
- 1½ tsp honey
- 1 small clove garlic
- ¼ tsp salt
Instructions
1. Place all the ingredients to make the dressing into a blender or food processor. Blend
until pureed and well mixed.
2. In a large bowl, blend spring mix, clementines, and onions. Add dressing right before
serving.
