Chef Shannen Tune's Smoked Chorizo Queso with Vidalia Onions

Made with chorizo sausage, fresh tomatoes, Vidalia onions, and lots of cheese, this simple dip is flavor-packed! Perfect for tailgates, summer cookouts, and any other type of gathering you can imagine. Throw it on the grill or in the oven, and it's ready to go in mere minutes.

  • 2 lbs easy-melt cheese (like Velveeta), diced 
  • 2 cups sharp cheddar cheese, shredded 
  • 1 lb chorizo sausage
  • 2 Vidalia onions, diced 
  • 2 beefsteak tomatoes, diced
  • ½ bunch cilantro, chopped 
  1. Preheat grill or oven to 350°F (177°C).
  2. Add all ingredients to an aluminum foil pan. 
  3. Cook for 20 minutes, or until everything is melted. 
  4. Stir well and serve with your favorite chips.
