Watermelon, Grilled Chicken & Vidalia® Onion Tacos

This summer recipe combines some of our seasonal favorites – grilling, watermelon and, of course, Vidalia onions. Add it to your Taco Tuesday rotation or just enjoy for lunch or dinner when you want some added freshness.



  • 2 c. ripe Cherry or Grape Tomatoes, cut in half
  • 2 large Jalapeno Peppers, chopped fine with seeds and veins
  • 1 large RealSweet Vidalia Onion, thinly sliced
  • 2 Tbsp. Extra Virgin Olive Oil
  • 3 c. Grilled Chicken Breast, chopped
  • 2 Limes, juiced
  • Salt, to taste
  • 2 c. Seedless Watermelon, chopped
  • 1 1/4 c. Cilantro
  • 3/4 c. Cotiia Cheese, crumbled
  • 12 Small Flour Tortillas

Coolie Sauce:

  • 1/2 c. Mayonnaise
  • 1/3 c. Mexican crema
  • 4 Tbsp. Fresh Cilantro, finely chopped
  • 2 Limes, juiced
  • 1 Tbsp. White Sugar
  1. For Taco: Mix tomatoes, jalapenos, onion, olive oil, lime juice, watermelon and cilantro Layer chicken, produce mixture and cheese onto tortillas
  2. For Coolie Sauce: Whisk together all ingredients and pour into squeeze bottle to top on tacos
