Sweet Onion & Veggie Omelette

Ingredients
  • 1 tsp. Olive oil
  • ¼ c. RealSweet® sweet onion, chopped
  • ½ c. broccoli and/or cauliflower, chopped
  • 1 Egg
  • 1 Egg white
  • 2 Tbsp. Cheddar cheese, grated
  • ¼ c. Tomato, diced
  • Herbs for seasoning
Instructions
  1. Whisk whole egg and egg white gently in a small bowl.
  2. In a small, non-stick skillet, sauté onions in olive oil.
  3. Add broccoli and/or cauliflower and cook 2-3 minutes.
  4. Add eggs and cook until set.
  5. Gently flip, add cheese and herbs.
  6. Cook until bottom is slightly golden. Gently fold omelet in half.
  7. Top with tomatoes and serve.
