Sweet Onion & Cheese Quesadillas

These cheese and sweet onion quesadillas are simple to prep and easy to add any other veggies you like, whether it's spinach, peppers, or mushrooms. Don't forget to serve with guacamole or salsa!

  • 1 Tbsp. Butter
  • 1 RealSweet® sweet onion, sliced
  • 6 Flour tortillas
  • 1 c. Shredded Cheddar cheese, divided
  • ⅓ c. Red Pepper, finely diced
  • ¼ c. Fresh Cilantro, roughly chopped
  1. In a large skillet, melt butter over medium heat and sauté onion until softened.
  2. Lay tortillas on work surface and sprinkle half of cheese on half of each tortilla.
  3. Divide onions evenly among tortillas, placing over cheese.
  4. Top with red pepper and cilantro.
  5. Sprinkle remaining cheese over cilantro leaves.
  6. Fold plain half over filling and press down gently.
  7. Place folded quesadillas in hot skillet and cook until golden brown.
  8. Turn and cook other side. Remove from pan. Cut each into 3 triangles. Serve warm.
