Sweet Onion & Cheese Quesadillas

These cheese and sweet onion quesadillas are simple to prep and easy to cook. Get creative and add any other veggies you like, whether it's spinach, peppers, or mushrooms. Don't forget to serve with guacamole or salsa!

  • 1 Tbsp butter
  • 1 sweet onion, sliced
  • 6 flour tortillas
  • 1 cup shredded cheddar cheese, divided
  • ⅓ cup red pepper, finely diced
  • ¼ cup fresh cilantro, roughly chopped
  1. In a large skillet, melt butter over medium heat and sauté onion until softened.
  2. Lay tortillas on work surface and sprinkle half of cheese on half of each tortilla.
  3. Divide onions evenly among tortillas, placing over cheese.
  4. Top with red pepper and cilantro.
  5. Sprinkle remaining cheese over cilantro leaves.
  6. Fold plain half over filling and press down gently.
  7. Place folded quesadillas in hot skillet and cook until golden brown.
  8. Turn and cook other side. Remove from pan. Cut each into 3 triangles. Serve warm.
