Southwest Steak and Vidalia® Onion Salad
Southwest flavors combined with juicy steak and sweet Vidalia onions makes for a crowd-pleasing salad!
Ingredients
- 1 Medium RealSweet® Vidalia® Onion
- 1 pkg. (12 oz.) Romaine Salad
- 2 lbs. Flank Steak
- 2 Ears (or 1½ Cups) Yellow Corn
- 1 Cup Cherry Tomatoes, Halved
- 1 Tbsp. Paprika
- 1 Tbsp. Chili Powder
- 1 Tbsp. Salt
- 1 Tbsp. Ground Black Pepper
- ½ tsp. Cayenne Pepper
- ½ tsp. Ground Cumin
- ½ tsp. Garlic Powder
- ½ Cup Grated Parmesan Cheese
- Olive Oil
- Ranch Dressing, amount as desired
Instructions
- In a bowl, combine the dried spices and 2 Tbsp. of olive oil and mix well into a paste-like consistency. Toss steak in the mix, turning to coat well.
- On a hot grill, cook the steak on both sides to desired doneness.
- Remove the meat from the grill and set aside for ten minutes before thinly slicing against the grain
- Rub ears of corn with another 2 Tbsp. of olive oil and cook until a small amount of charring occurs. You can also use 1½ Cups canned corn.
- Place Romaine Salad in a large bowl and toss with the Ranch dressing.
- Add sliced RealSweet® Vidalia onions, corn, tomatoes, cheese and sliced steak.
- Top with additional Ranch dressing as desired.
