Southwest Steak and Vidalia® Onion Salad

Southwest flavors combined with juicy steak and sweet Vidalia onions makes for a crowd-pleasing salad!

  • 1 Medium RealSweet® Vidalia® Onion
  • 1 pkg. (12 oz.) Romaine Salad
  • 2 lbs. Flank Steak
  • 2 Ears (or 1½ Cups) Yellow Corn
  • 1 Cup Cherry Tomatoes, Halved
  • 1 Tbsp. Paprika
  • 1 Tbsp. Chili Powder
  • 1 Tbsp. Salt
  • 1 Tbsp. Ground Black Pepper
  • ½ tsp. Cayenne Pepper
  • ½ tsp. Ground Cumin
  • ½ tsp. Garlic Powder
  • ½ Cup Grated Parmesan Cheese
  • Olive Oil
  • Ranch Dressing, amount as desired
  1. In a bowl, combine the dried spices and 2 Tbsp. of olive oil and mix well into a paste-like consistency. Toss steak in the mix, turning to coat well.
  2. On a hot grill, cook the steak on both sides to desired doneness.
  3. Remove the meat from the grill and set aside for ten minutes before thinly slicing against the grain
  4. Rub ears of corn with another 2 Tbsp. of olive oil and cook until a small amount of charring occurs. You can also use 1½ Cups canned corn.
  5. Place Romaine Salad in a large bowl and toss with the Ranch dressing.
  6. Add sliced RealSweet® Vidalia onions, corn, tomatoes, cheese and sliced steak.
  7. Top with additional Ranch dressing as desired.
