Sautéed Sweet Onion and Mushroom Salad

Sweet onions and mushrooms are sautéed together to bring a wonderfully sweet and savory flavor to this fantastic salad. It's perfect for a mid-day energy boost and will leave you energetic for the rest of the day.

  • 1 sweet onion, thinly sliced
  • 1 package (6 oz) of sliced white To-Jo® mushrooms
  • 1 package (12 oz) of baby spinach
  • ½ cup of red pepper, diced
  • ½ Tbsp of garlic minced
  • 1 Tbsp of olive oil
  • salt & pepper
  • balsamic vinaigrette, amount as desired
  1. Place baby spinach into a large serving bowl and set aside.
  2. Heat oil in a large non-stick skillet over medium-high heat.
  3. Add mushrooms and cook without stirring for about 5 minutes or until mushrooms are red-brown on one side.
  4. Turn mushrooms and stir in onion, red pepper and garlic. Cook for 5 more minutes or until onions begin to soften.
  5. Remove the pan from heat and transfer the mixture to serving bowl.
  6. Add salt and pepper to taste and scatter fresh chives on top.
  7. Drizzle the balsamic vinaigrette over the top of the salad.
