Quick Pickled Rubies Sweet Red Onions

There's nothing better than a batch of homemade pickled vegetables, especially during the summer!  These fabulous pickled sweet red onions are quick and easy and perfectly highlight the unique sweetness of our RealSweet® Rubies® sweet red onion. 1 large RealSweet® Rubies® sweet red onion, sliced very thin

½ cup rice vinegar

¼ cup hot water

1 ½ tablespoon honey

1 ½ teaspoon salt

10 peppercorns

4-6 whole cloves

1 clove garlic, smashed

Pinch of red pepper flakes


1. Bring a medium-sized pot of water to a boil.

2. Meanwhile, add ¼ cup hot water to a mason jar, then stir in the honey until dissolved. Add rice vinegar, salt, peppercorns, cloves, garlic, and red pepper flakes to the mason jar. Set aside.

3. Add sliced onions to boiling water. Cook for 60 seconds then strain. Carefully add hot onions to the mason jar. Cover and let sit for at least an hour, or overnight for best results.
