Potato Salad with Bacon & Sweet Onions

This dish is sure to be a hit at your next family gathering, cookout or potluck. Give classic potato salad a RealSweet makeover with sweet onions and bacon, and celebrate the summer months with a tasty side dish!

  • 2 lbs small red potatoes
  • ½ cup sweet onion, chopped
  • 6 to 8 slices of bacon
  • 1 cup ranch salad dressing
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 tsp dry mustard
  • salt and pepper, to taste
  • parsley, for garnish
  1. Cut red potatoes into quarters and cook in boiling salted water for 25 to 30 minutes, or until tender. Drain well.
  2. Cook bacon until crispy and crumble.
  3. In a large bowl, combine ranch salad dressing, sour cream and mayonnaise.
  4. Add potatoes, bacon, onion, dry mustard and salt and pepper to taste.
  5. Add parsley to garnish.
