Pasta Salad with Italian Sausage, Peppers, and Sweet Onions

Pasta salad becomes an easy lunch or dinner with the addition of Italian sausage, peppers, and Vidalia onions. Great for outdoor gatherings and quick weeknight dinners! Recipe and photo courtesy of the Vidalia Onion Committee.

Ingredients
  • 12 oz of Farfalle pasta
  • ¼ cup of olive oil, divided
  • 1 sweet onion, cut into chunks
  • 2 red bell peppers, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 (19 oz.) package of Johnsonville® mild Italian sausage
  • 2 Tbsp of fresh lemon juice
  • 2 Tbsp of Dijon mustard
  • 1 Tbsp of Gourmet Garden® Garlic
  • 1 Tbsp of fresh thyme, chopped
  • 2 tsp salt
Instructions
  1. Preheat grill to 350 to 400°F (177 to 200°C) - medium-high heat.
  2. Cook pasta according to package directions, drain, rinse under cold water and transfer to a large bowl.
  3. Toss 1 Tbsp oil, onion and bell peppers in a large zip top bag.
  4. Grill pepper mixture and sausage on each side until done, 8 to 10 minutes.
  5. Cut sausages diagonally into thin slices.
  6. Whisk together remaining oil, lemon juice, mustard, garlic, thyme and salt in a large bowl. Toss pasta, sausage and vegetables with dressing.
