Overnight Refrigerator Pickles with Sweet Onions

Every fall, community and family gardens are ripe for the harvest and usher in the fall season. Do you have an abundance of cucumbers from your garden? Ingredients
  • 1 english cucumber or 2 large pickling cucumbers, sliced
  • ½ sweet onion, sliced
  • 2 cloves garlic, smashed
  • 4 sprigs fresh dill
  • ¾ cup vinegar
  • ¼ cup hot water
  • ¼ cup sugar
  • 2 tsp salt
  • ½ tsp whole peppercorns
  • 2 small mason jars with lids
Instructions
  1. Place fresh dill into the bottom of 2 mason jars.
  2. Fill jars with cucumbers and onions, pushing down gently to pack in tightly.
  3. To a medium sized bowl with a spout, add vinegar, hot water, sugar, salt, garlic and whole peppercorns.
  4. Stir until the sugar and salt are dissolved.
  5. Pour over cucumbers in both jars. Place the lid on and refrigerate for at least 24 hours.
