Breakfast Skillet with Vidalia Onions

Sometimes, you need a simple breakfast to start your day off on the right foot. Even better if that breakfast is easy to make and easy to clean up while leaving you with an extra burst of energy and enthusiasm to start you on your day.

This quick & easy breakfast skillet with Vidalia onions and Italian sausage is a perfect dish for a weekend breakfast or a weeknight dinner. Bonus - there will only be one pan to clean up! Recipe and photography by Jodi Danen of Create Kids Club.

Ingredients
  • 1 lb sweet Italian sausage
  • 24 oz frozen southern style diced potatoes
  • 1 medium Vidalia onion, diced
  • 2 cloves garlic, minced
  • ½ cup water
  • ½ tsp salt
  • ½ tsp pepper
  • 4 eggs
  • ½ cup shredded sharp cheddar cheese
  • scallions for garnish (optional)
  • drizzle of olive oil
Instructions
  1. In a large skillet, brown sausage until cooked through. Remove sausage and set aside, leaving drippings in the pan.
  2. Add onion, sauté until translucent.
  3. Add garlic, frozen diced potatoes, and water. Cover and cook over medium heat for 5 minutes.
  4. Uncover and continue cooking for 10 minutes, stirring once. Add a drizzle of oil if potatoes start sticking to the bottom of the pan.
  5. Add sausage back to the pan.
  6. Using a spatula, clear 4 small spaces for the eggs. Crack eggs into the pan over high heat and sprinkle shredded cheese onto the potatoes in the skillet.
  7. Once the edges of the eggs set, turn heat down, cover, and cook 8 to 10 minutes or until eggs are cooked to your liking.
  8. Serve immediately. Garnish with scallions if desired.
