Grilled Sweet Onion & Pepper Pasta

A classic pasta dish is perfect for any occasion. Our Vidalia onions, red peppers and a creamy sauce make for a decadent pasta dinner that will impress any guest and their tastebuds. Recipe courtesy of the Vidalia Onion Committee

  • 2 medium sweet onions
  • 2 red bell peppers, cored and seeded
  • 2 Tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ tsp crushed red pepper
  • ½ cup dry white wine
  • ½ cup chicken broth
  • ¾ cup whipping cream
  • ½ lb dry fettuccine
  • ⅓ cup fresh Italian parsley, chopped
  1. Cut onions and peppers lengthwise into quarters and grill or roast until well charred.
  2. Place peppers in a paper bag until cooled.
  3. Slice onions and peppers into strips and set aside.
  4. In a large skillet, heat oil and sauté garlic and crushed red pepper until fragrant.
  5. Stir in wine, chicken broth and cream and bring to a boil.
  6. Reduce heat and simmer 2 to 3 minutes.
  7. Cook fettuccine according to package directions, drain and set aside.
  8. Stir parsley, onions and peppers into sauce and toss with fettuccine.
