Grilled Sweet Onion & Pepper Pasta

Sweet onions, red peppers and a creamy sauce make for a decadent pasta dinner. Recipe courtesy of the Vidalia Onion Committee

  • 2 Medium RealSweet® sweet onions
  • 2 Red bell peppers, cored and seeded
  • 2 Tbsp. Olive oil
  • 2 Cloves garlic, minced
  • ¼ tsp. Crushed red pepper
  • ½ c. Dry white wine
  • ½ c. Chicken broth
  • ¾ c. Whipping cream
  • ½ lb. Dry fettuccine
  • ⅓ c. Fresh Italian parsley, chopped
  1. Cut onions and peppers lengthwise into quarters and grill or roast until well charred.
  2. Place peppers in a paper bag until cooled.
  3. Slice onions and peppers into strips and set aside.
  4. In a large skillet, heat oil and sauté garlic and crushed red pepper until fragrant.
  5. Stir in wine, chicken broth and cream and bring to a boil.
  6. Reduce heat and simmer 2 to 3 minutes.
  7. Cook fettuccine according to package directions, drain and set aside.
  8. Stir parsley, onions and peppers into sauce and toss with fettuccine.
