Greek Chicken Gyro with Sweet Red Onions

Ingredients

¼ cup canola oil

¼ cup beer

1 tablespoon lemon juice

2 cloves garlic, minced

½ teaspoon salt

½ teaspoon dill

¼ teaspoon pepper

1.5 lb chicken tenderloins

4 pitas

1 cup shredded lettuce

1 roma tomato, sliced

½ small sweet red onion, sliced

½ cup tzatziki sauce

Instructions

1. Add chicken tenderloins to a zip-lock bag. Combine oil, beer, lemon juice, garlic, salt, dill, and pepper in a small bowl. Pour over the chicken and seal. Refrigerate for 2 hours (or at least 30 minutes).

2. Place chicken onto a baking pan, discard marinade, and broil for 10-15 minutes or until the internal temperature reaches 165°F.

3. Serve wrapped in pitas with lettuce, tomato, sweet red onion, and tzatziki sauce.
