Garden Shrimp Scampi with Vidalia® Onions

Shrimp scampi gets an upgrade with a few hearty servings of vegetables in this recipe. Plus, it's ready in about 30 minutes, making it the perfect healthy option for weeknight dinners! Recipe and photo courtesy of Produce for Kids.

  • 2 Tbsp. Unsalted butter
  • ½ c. RealSweet® Vidalia® onion, sliced
  • ½ c. Broccoli, chopped
  • ½ c. Cauliflower, chopped
  • ½ c. Carrots, chopped
  • 4 Cloves garlic, minced
  • 1 lb. Shrimp, peeled, deveined
  • 2 Tbsp. Fresh parsley, minced
  • 1 Tbsp. Lemon juice, or to taste
  • 2 c. Whole wheat linguine, cooked according to package directions
  1. Heat butter in large skillet over medium-high heat; add onions, broccoli, cauliflower and carrots, and cook 5 minutes, stirring often. Increase heat to high; add garlic, shrimp and parsley, and cook 2-3 minutes, stirring constantly, until shrimp turn pink.
  2. Remove from heat; add lemon juice and toss with pasta.
