Classic Vidalia Onion Soup

This classic Vidalia Onion Soup recipe is the perfect complement to any sandwich, salad or light meal. Try adding your own twist on seasonings for a recipe that is uniquely you!

  • 4 Large RealSweet® Vidalia® onions, sliced
  • 6 Tbs butter
  • 1 Tbs sugar
  • 2 quarts reduced sodium beef broth
  • ½ cup brandy (optional)
  • salt & pepper, to taste
  • ½ baguette French bread, sliced, toasted
  • grated Romano cheese
  1. Melt butter in a large saucepan that holds at least 4 quarts.
  2. Add sweet onions and cook over medium heat for 12 minutes or until the onions are tender and golden, stirring often.
  3. Add sugar and cook, stirring for 1 minute
  4. Add broth, cover and bring to a boil. Reduce heat and simmer for 12 minutes.
  5. If desired, add brandy and cook 2 minutes longer. Season with salt and pepper.
  6. Float toast on top of onion soup and sprinkle with cheese.
