Antipasto Salad with Rubies Sweet Red Onions

Ingredients
  • 1 head of romaine lettuce, chopped
  • ½ small RealSweet® Rubies® sweet red onion, sliced
  • 1 cup of cherry tomatoes, sliced
  • ½ cup of salami, chopped
  • ½ cup of kalamata olives
  • ¼ cup of shredded parmesan cheese
  • pepperoncini peppers
  • ¼ cup of canola oil
  • 1 ½ Tbsp of red wine vinegar
  • 1 tsp of stone ground mustard
  • ½ tsp of sugar
  • ½ tsp of Italian seasoning
  • ¼ tsp of salt
  • ⅛ tsp of pepper
  • ⅛ tsp of granulated garlic
Instructions

1. To a large bowl add lettuce, sweet red onion, cherry tomatoes, salami, kalamata olives, parmesan and pepperoncini peppers.

2. In a small bowl whisk together the oil, vinegar, mustard, sugar, Italian seasoning, salt, pepper, and granulated garlic. Pour over salad just before serving.
