Francine’s Sweet Onion Jam
Ingredients
- 1 1/2 lbs. grape (recommend Concord)
- 1/2 c. white sugar
- 1 lb. bacon
- 3 medium RealSweet sweet onions
- 2 Tbsp. cornstarch
- 1 1/2 Tbsp. water.
Instructions
- In saucepan, cook grapes and sugar over medium heat until grapes have released juices, stir occasionally to keep from sticking
- Cook bacon until done but soft not crispy, remove from pan keep drippings
- Slice onions and cook down in bacon drippings
- Stir cooked bacon and onions in with cooked grapes mix and let reduce down by half (about 10 mins)
- In separate bowl, mix cornstarch with water until blended, pour in to mixture
- Cook until thickened, remove from heat, let cool before serving
