Garden Shrimp Scampi with Sweet Onions

Shrimp scampi gets an upgrade with a few hearty servings of vegetables in this recipe. Plus, it's ready in about 30 minutes, making it the perfect healthy option for weeknight dinners and meal planning! Recipe and photography courtesy of Healthy Family Project.

Ingredients
  • 2 Tbsp unsalted butter
  • ½ cup sweet onion, sliced
  • ½ cup broccoli, chopped
  • ½ cup cauliflower, chopped
  • ½ cup carrots, chopped
  • 4 garlic cloves, minced
  • 1 lb shrimp, peeled, deveined
  • 2 Tbsp fresh parsley, minced
  • 1 Tbsp lemon juice, or to taste
  • 2 cups whole wheat linguine, cooked according to package directions
Instructions
  1. Heat butter in large skillet over medium-high heat; add onions, broccoli, cauliflower and carrots, and cook 5 minutes, stirring often. Increase heat to high; add garlic, shrimp and parsley, and cook 2 to 3 minutes, stirring constantly, until shrimp turn pink.
  2. Remove from heat; add lemon juice and toss with pasta.
